Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup chopped pecans
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1/4 cup honey
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
- In a bowl, mix together the flour, baking soda, salt, and cinnamon.
- In another bowl, cream together the butter and sugar until fluffy.
- Beat in the eggs one at a time, followed by the buttermilk and vanilla extract.
- Gradually add the dry ingredients and fold in the chopped pecans.
- Pour the batter into the loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- While the bread bakes, heat the honey in a small saucepan until it becomes slightly runny.
- Brush the warm bread with the honey glaze and let it cool before slicing.
Notes
- For a sweeter twist, add chocolate chips to the batter.
- Fold in dried cranberries, raisins, or fresh berries for added flavor.
- For a spicier version, add a pinch of nutmeg or ginger.
- Make it gluten-free by substituting the all-purpose flour with a gluten-free flour blend.
- If you don’t have buttermilk, make a quick substitute with regular milk and a teaspoon of vinegar or lemon juice.
