Ingredients
1 box brownie mix (plus ingredients to prepare, typically eggs, oil, and water)
½ cup chopped pecans
¼ cup brown sugar
2 tablespoons corn syrup
1 tablespoon melted butter
½ teaspoon vanilla extract
Pinch of salt
Instructions
-
Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with paper liners.
-
Prepare the Brownie Batter: Prepare the brownie batter according to the package instructions.
-
Fill the Muffin Tin: Spoon the brownie batter into the mini muffin cups, filling each about 2/3 full.
-
Make the Pecan Topping: In a small bowl, mix the chopped pecans, brown sugar, corn syrup, melted butter, vanilla extract, and a pinch of salt. Stir until the mixture is well combined.
-
Top the Brownies: Spoon a small amount of the pecan mixture on top of each brownie cup, pressing it gently into the batter.
-
Bake: Bake for 18-22 minutes or until the brownie bites are set and slightly domed on top. The center should be firm to the touch, and a toothpick inserted should come out mostly clean.
-
Cool and Serve: Let the brownie bites cool in the pan before removing them. They will firm up as they cool, making them easier to remove. Serve and enjoy!
Notes
-
Variations: Swap pecans for walnuts, almonds, or other nuts for a nutty twist. Add chocolate chips to the batter for extra chocolate flavor, or drizzle with caramel sauce for added indulgence.
-
Storage: Store these brownie bites in an airtight container at room temperature for up to 3 days. You can refrigerate them for up to a week or freeze them for up to 3 months. Thaw at room temperature before serving.
