Ingredients
- 8 oz. spaghetti, cooked and cooled
- 1 cucumber, chopped
- 1 red bell pepper, chopped
- 1/2 red onion, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/4 cup Italian dressing
- 1 tablespoon olive oil
- Salt and pepper, to taste
Instructions
- In a large bowl, combine cooked spaghetti, cucumber, bell pepper, onion, tomatoes, and olives.
- Drizzle with Italian dressing and olive oil, then toss to coat.
- Season with salt and pepper, and refrigerate for at least 1 hour before serving.
Notes
- For added flavor, sprinkle Parmesan cheese on top before serving.
- You can substitute vegetables based on your preferences.
- Great for meal prep as it can be made ahead of time and stored in the refrigerator.
