- 1 1/2 cups mozzarella cheese
- 2 tablespoons cream cheese
- 3/4 cup almond flour
- 1 egg white
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon liquid stevia
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt the mozzarella and cream cheese together in a microwave-safe bowl or on the stove until fully melted and smooth.
- Add almond flour, baking powder, and egg white to the melted cheese mixture and mix until a dough forms.
- Roll out the dough between two pieces of parchment paper until about 1/4 inch thick.
- In a small bowl, mix stevia, vanilla extract, and ground cinnamon.
- Brush the cinnamon mixture onto the rolled-out dough and carefully roll it up into a log.
- Slice the dough into 6 pieces and place on the prepared baking sheet.
- Bake for 35 minutes or until golden brown.
- Let cool for a few minutes before serving.
