Keto Pop Tarts are a delicious low-carb, grain-free take on the classic breakfast treat. Made with almond flour and filled with sugar-free jam, these homemade pop tarts are flaky, sweet, and perfect for anyone on a keto or low-carb diet. With a simple glaze and customizable fillings, they’re a delightful way to enjoy a guilt-free breakfast or snack.

  • Total Time: 25 minutes
  • Yield: 6 pop tarts

Ingredients

1 ½ cups almond flour

1 egg

¼ cup butter, softened

1 tablespoon erythritol (or sweetener of choice)

2 tablespoons water

¼ cup sugar-free jam (strawberry, raspberry, or your favorite)

2 tablespoons powdered erythritol (for glaze)

½ teaspoon vanilla extract

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  • Prepare the Dough: In a bowl, mix together almond flour, egg, softened butter, erythritol, and water until a smooth dough forms.

  • Roll and Cut the Dough: Roll the dough out on a floured surface into a thin rectangle. Cut into small rectangular pieces, the size of traditional pop tarts.

  • Add the Jam Filling: Place about 1 teaspoon of your favorite sugar-free jam in the center of each rectangle.

  • Seal the Pop Tarts: Fold the dough over the jam to create a pocket. Press the edges together to seal, crimping with a fork if needed.

  • Bake the Pop Tarts: Place on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.

  • Cool and Glaze: Let them cool on a wire rack before glazing. Mix powdered erythritol with vanilla extract and water to create a glaze, then drizzle over the cooled pop tarts.

  • Serve: Enjoy your keto-friendly, homemade pop tarts!

Notes

  • Jam Fillings: Feel free to use your favorite sugar-free jam or fruit preserves, including blueberry, raspberry, or apple cinnamon.

  • Add-ins: Add a sprinkle of cinnamon or a few chopped nuts for extra flavor and texture.

  • Frosting: For an indulgent treat, top with keto-friendly chocolate or cream cheese frosting instead of the glaze.
