Ingredients
1 ½ cups almond flour
1 egg
¼ cup butter, softened
1 tablespoon erythritol (or sweetener of choice)
2 tablespoons water
¼ cup sugar-free jam (strawberry, raspberry, or your favorite)
2 tablespoons powdered erythritol (for glaze)
½ teaspoon vanilla extract
Instructions
- 
Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. 
- 
Prepare the Dough: In a bowl, mix together almond flour, egg, softened butter, erythritol, and water until a smooth dough forms. 
- 
Roll and Cut the Dough: Roll the dough out on a floured surface into a thin rectangle. Cut into small rectangular pieces, the size of traditional pop tarts. 
- 
Add the Jam Filling: Place about 1 teaspoon of your favorite sugar-free jam in the center of each rectangle. 
- 
Seal the Pop Tarts: Fold the dough over the jam to create a pocket. Press the edges together to seal, crimping with a fork if needed.

Bake the Pop Tarts: Place on the prepared baking sheet and bake for 12-15 minutes, or until golden brown. 
- 
Cool and Glaze: Let them cool on a wire rack before glazing. Mix powdered erythritol with vanilla extract and water to create a glaze, then drizzle over the cooled pop tarts.
