Ingredients
- 2 cups plain Greek yogurt
- 2 tbsp honey (or preferred sweetener)
- 2 tbsp lime juice (freshly squeezed)
- Zest of 1 lime
- 1/4 tsp vanilla extract
- 1/4 cup graham cracker crumbs
- 1–2 tbsp shredded coconut (optional for garnish)
Instructions
- In a medium-sized bowl, combine Greek yogurt, honey, lime juice, lime zest, and vanilla extract. Stir until smooth and well combined.
- Line a baking sheet with parchment paper or a silicone mat.
- Spread the yogurt mixture evenly onto the prepared baking sheet, creating a smooth, flat layer.
- Sprinkle the graham cracker crumbs evenly over the top of the yogurt mixture for that classic key lime pie flavor.
- If desired, sprinkle shredded coconut on top for added texture and flavor.
- Place the baking sheet in the freezer for at least 2 hours, or until the yogurt bark is fully frozen.
- Once frozen, break the bark into pieces and serve immediately or store in an airtight container in the freezer.
Notes
- Feel free to adjust the sweetness by adding more or less honey to suit your taste.
- To make it more decadent, you can drizzle some white chocolate over the bark before freezing.
- For a dairy-free version, use dairy-free Greek yogurt or coconut yogurt.
- You can experiment with adding other toppings like fresh lime slices, crushed nuts, or berries for extra flavor.
