Ingredients
For the Dough:
- 1 cup warm milk
- ¼ cup granulated sugar
- 2 ¼ teaspoons active dry yeast
- ½ cup unsalted butter, melted
- ½ teaspoon salt
- 4 cups all-purpose flour
- 1 large egg
- 1 tablespoon lemon zest
For the Filling:
- ½ cup fresh lemon juice
- ½ cup brown sugar, packed
- 2 tablespoons unsalted butter, softened
For the Glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- 1 tablespoon milk
Instructions
1. Activate the Yeast
- In a small bowl, combine warm milk, granulated sugar, and yeast.
- Let it sit for 5-10 minutes until foamy.
2. Prepare the Dough
- In a large mixing bowl, combine melted butter, salt, flour, egg, and lemon zest.
- Add the yeast mixture and stir until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
3. First Rise
- Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise for 1 hour, or until doubled in size.
4. Prepare the Filling
- Punch down the dough and roll it out into a 12×18-inch rectangle.
- Spread softened butter over the dough, then sprinkle with brown sugar and fresh lemon juice.
5. Shape the Rolls
- Roll the dough tightly and cut it into 12 equal pieces.
- Place the rolls into a greased 9×13-inch baking dish.
6. Second Rise
- Cover and let the rolls rise for 30-45 minutes, until puffed up.
7. Bake the Rolls
- Preheat your oven to 350°F (175°C).
- Bake for 25-30 minutes, or until golden brown.
8. Make the Lemon Glaze
- While the rolls are baking, whisk together powdered sugar, lemon juice, and milk until smooth.
9. Glaze & Serve
- Once the rolls are done, drizzle the lemon glaze over them while they’re still warm.

Notes
- Make it extra lemony – Add more lemon zest to the dough and glaze.
- Berry twist – Add fresh raspberries or blueberries to the filling.
- Overnight option – Prepare the rolls, cover, and refrigerate overnight. Bake fresh in the morning.
