 - ½ cup fresh strawberries, chopped
 - 2 tbsp powdered erythritol (or preferred keto sweetener)
 - 1 tsp vanilla extract
 - ¼ cup heavy whipping cream
 - ½ tsp lemon juice (optional, for added freshness)
 
Instructions
1. Blend the Base
- In a blender or food processor, combine cottage cheese, strawberries, erythritol, vanilla extract, and lemon juice (if using).
 - Blend until smooth and creamy.
 
2. Whip the Cream
- In a separate bowl, whip the heavy whipping cream until soft peaks form.
 
3. Combine & Chill
- Gently fold the whipped cream into the strawberry mixture until fully incorporated.
 - Spoon into serving dishes and refrigerate for at least 30 minutes before serving.
 
4. Serve & Garnish
- Garnish with fresh strawberries or mint leaves if desired.
