1 cup unsweetened peanut butter
1/4 cup coconut flour
1/4 cup Swerve sweetener (or any sweetener of choice)
1/2 cup sugar-free chocolate chips
1/2 cup chopped salted peanuts
1/4 cup coconut oil
1/2 tsp vanilla extract
Instructions
- In a medium-sized bowl, combine peanut butter, coconut flour, and sweetener, mixing until well-combined.
- Line a small loaf pan with parchment paper and press the peanut butter mixture evenly into the bottom.
- Freeze the pan for 15-20 minutes to set.
- In a separate bowl, melt the chocolate chips and coconut oil together, stirring until smooth.
- Remove the pan from the freezer and pour the melted chocolate mixture over the peanut butter layer.
- Sprinkle chopped peanuts over the top.
- Freeze for 1-2 hours until set.
- Slice into bars and enjoy!
Notes
- For best results, store the bars in the refrigerator to keep them firm.
- You can substitute peanut butter with almond butter for a different flavor.
