A delicious and hearty Mexican Cornbread Casserole with layers of seasoned beef, cornbread, and cheesy goodness.

  • Total Time: 50 minutes
  • Yield: 6 servings

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies, drained
  • 1 can corn, drained
  • 1 cup shredded cheddar cheese
  • 1 box cornbread mix (plus ingredients listed on the box)
  • 1 cup sour cream
  • 1 cup salsa

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet, brown the ground beef with the diced onion until fully cooked. Drain excess fat.
  3. Stir in taco seasoning, diced tomatoes with chilies, and corn. Cook for 5 minutes and then remove from heat.
  4. Prepare cornbread mix according to package instructions, then stir in sour cream.
  5. Layer beef mixture in the prepared baking dish, top with cornbread batter, and sprinkle with cheese.
  6. Bake for 30-35 minutes, or until cornbread is golden and a toothpick inserted comes out clean.

Notes

  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • If you like spicy food, consider using spicy taco seasoning and adding jalapeños to the mixture.
  • Let the casserole rest for a few minutes before serving for easier slicing.
