Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet, brown the ground beef with the diced onion until fully cooked. Drain excess fat.
- Stir in taco seasoning, diced tomatoes with chilies, and corn. Cook for 5 minutes and then remove from heat.
- Prepare cornbread mix according to package instructions, then stir in sour cream.
- Layer beef mixture in the prepared baking dish, top with cornbread batter, and sprinkle with cheese.
- Bake for 30-35 minutes, or until cornbread is golden and a toothpick inserted comes out clean.

- You can substitute ground beef with ground turkey or chicken for a leaner option.
