- 8 oz. elbow macaroni, cooked and drained
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 cup corn kernels
- 1/2 cup red bell pepper, chopped
- 1/4 cup cilantro, chopped
- Salt and pepper, to taste
Instructions
- In a large bowl, combine cooked macaroni, mayonnaise, sour cream, lime juice, and chili powder.
- Add corn, bell pepper, and cilantro, then mix well.
- Season with salt and pepper and refrigerate for at least 1 hour before serving.
Notes
- You can add jalapeños for extra spice, if desired.
