Instructions
- Preheat oven to 350°F (175°C). Place mini pie crusts on a baking sheet.
- In a mixing bowl, whisk together brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until smooth.
- Stir in the chopped pecans until well combined.
- Pour the pecan mixture into the mini pie crusts, filling each almost to the top.
- Bake for 20-25 minutes, or until the filling is set and golden brown.
- Let the pies cool completely before serving.
