  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

For the crepes:

1 cup all-purpose flour

1 tablespoon sugar

¼ teaspoon salt

1 ¼ cups milk

2 large eggs

2 tablespoons melted butter

1 teaspoon vanilla extract

For the filling:

½ cup fresh strawberries, sliced

½ cup fresh blueberries

½ cup fresh raspberries

For dusting:

Powdered sugar

Instructions

  • Make the Crepe Batter:

    • In a medium bowl, whisk together the flour, sugar, and salt.

    • Add the milk, eggs, melted butter, and vanilla extract, and whisk until the batter is smooth and free of lumps.

  • Cook the Crepes:

    • Heat a non-stick skillet over medium heat and lightly grease with butter or cooking spray.

    • Pour about ¼ cup of batter into the skillet, swirling the pan to evenly coat the bottom.

    • Cook for 1-2 minutes until the edges begin to lift, then flip the crepe and cook for another 30 seconds. Remove from the skillet and set aside.

    • Repeat with the remaining batter, stacking the crepes on a plate.

  • Assemble the Crepes:

    • Once all the crepes are cooked, fill each one with a handful of fresh berries.

    • Sprinkle with powdered sugar before serving.

Notes

  • Different Fruit Fillings: Try bananas, peaches, or blackberries for a unique twist.

  • Whipped Cream: Add a dollop of fresh whipped cream for a richer treat.

  • Chocolate Drizzle: Drizzle melted chocolate for a chocolatey addition.

  • Nutty Crunch: Sprinkle chopped nuts like almonds or hazelnuts for extra texture.

  • Citrus Zest: Add lemon or orange zest to the filling for a refreshing citrus kick.
