Ingredients
1/2 cup cottage cheese
1/2 cup Greek yogurt
2 tablespoons cocoa powder
1/2 teaspoon instant espresso powder
1 scoop chocolate or vanilla protein powder
2 tablespoons maple syrup or stevia
1/2 teaspoon vanilla extract
Toppings:
Dark chocolate shavings
Cocoa powder dusting
Crushed espresso beans
Instructions
- 
In a blender or food processor, combine cottage cheese, Greek yogurt, cocoa powder, instant espresso powder, protein powder, maple syrup (or stevia), and vanilla extract.

Blend until smooth, scraping down the sides as needed. Blend again for extra creaminess. 
- 
Spoon the mousse into small serving cups. 
- 
Refrigerate for at least 30 minutes to allow it to set and chill. 
- 
Just before serving, garnish with dark chocolate shavings, a dusting of cocoa powder, and crushed espresso beans for added flavor.
