Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, combine the rolled oats, almond flour, baking soda, and cinnamon.
- In another bowl, whisk together the applesauce, egg, maple syrup, and vanilla extract.
- Stir the wet ingredients into the dry ingredients until combined.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool before serving.
