Ingredients
- 4 slices of bread (white, whole wheat, or brioche for a richer taste)
- 4 tbsp peanut butter (or any nut/seed butter)
- 4 tbsp jelly or jam (strawberry, grape, or your favorite flavor)
- 2 large eggs
- ½ cup milk (whole, almond, or oat milk)
- 1 tsp vanilla extract
- ½ tsp ground cinnamon
- 1 tbsp butter (for cooking)
- Whipped cream (optional, for topping)
Instructions
- Spread 1 tablespoon of peanut butter on one side of each slice of bread. Follow with a layer of jelly or jam evenly over the peanut butter. Press two slices of bread together for each sandwich.
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until smooth.
- Carefully dip each sandwich into the batter, letting each side absorb the mixture for a few seconds. Be gentle to avoid tearing the bread.
- Heat a skillet over medium heat, and add butter to coat the pan. Place the sandwiches in the skillet and cook for 3–4 minutes per side, until golden brown and crisp.
- Transfer to a plate, garnish with whipped cream, fresh fruit, powdered sugar, or maple syrup, and enjoy!
Notes
- Use day-old or lightly toasted bread for better structure.
- Avoid overstuffing sandwiches to reduce leakage.
- Experiment with different nut or seed butters for variation.
- Prepare the sandwiches and batter the night before for a quicker morning breakfast.
