Potato Cheese Sticks are the ultimate crispy and gooey snack, with a golden, crunchy exterior and a delicious cheddar cheese center. This vegetarian treat is perfect for game days, parties, or any gathering, offering a savory bite that everyone will love. Quick and easy to make, these cheese-filled potato sticks are customizable with different cheeses or seasonings, making them a versatile and crowd-pleasing option.

  • Total Time: 45 minutes
  • Yield: 5 servings (about 10-12 sticks)

Ingredients

  • 4 russet potatoes, cooked and mashed
  • 2 green onions, chopped
  • 1/4 cup sour cream
  • Salt, to taste
  • Pepper, to taste
  • 8 oz cheddar cheese block, cut into strips
  • 1/2 cup flour
  • 1 egg, beaten
  • 1/2 cup cornstarch
  • 1 cup panko breadcrumbs
  • Vegetable oil (for frying)

Instructions

  • Prepare the Potatoes:
Mash the cooked potatoes in a large bowl, then mix in green onion, sour cream, salt, and pepper. Mash until mostly smooth, but leave a few chunks for texture.

  • Form the Balls:
Take a spoonful of the mashed potato mixture, flatten it in your palm, and place a cheese strip in the center. Wrap the potato mixture around the cheese to form a ball, ensuring the cheese is fully enclosed. Repeat with the remaining mixture.

  • Prepare the Coating:
Set up three bowls: one with flour, one with beaten egg, and one with a mixture of cornstarch and panko breadcrumbs.
Coat each potato ball in flour, dip into the beaten egg, and then roll in the panko breadcrumb mixture until evenly coated.

  • Fry the Potato Cheese Sticks:
Heat vegetable oil in a deep fryer or large pot to 350°F (180°C).
Fry the potato balls in batches for about 3 minutes, or until golden brown and crispy. Remove from oil and drain on paper towels.

  • Serve:
Serve hot and enjoy the crispy, gooey cheese-filled potato sticks!

Notes

  • You can customize the cheese used in this recipe—mozzarella or gouda work well as alternatives to cheddar.
  • For a spicier option, add cayenne pepper or paprika to the potato mixture.
  • For a healthier version, try baking the coated potato balls at 400°F (200°C) for about 20 minutes, flipping halfway through.
