Ingredients

1 cup raspberries

2 cups mascarpone cheese

1 cup heavy cream

1/4 cup sugar

1 teaspoon vanilla extract

1 package ladyfinger biscuits

1 cup coffee or espresso, cooled

Instructions

  • In a mixing bowl, whip heavy cream with sugar and vanilla until stiff peaks form.

  • In a separate bowl, mix mascarpone until smooth.

  • Fold the whipped cream into the mascarpone gently until well combined.

  • Briefly dip each ladyfinger into the cooled coffee and layer in the bottom of an 8×8-inch dish.

  • Spread half of the mascarpone mixture over the ladyfingers, then add half of the raspberries.

  • Repeat with another layer of dipped ladyfingers, the remaining mascarpone mixture, and the rest of the raspberries.

  • Chill for at least 4 hours to set before serving.

  • Serve chilled and garnish with extra raspberries or mint if desired.
