- 1 lb. chicken breast
- 2–3 peaches, thickly sliced
- 1/4 cup red onion, thinly sliced
- 1/3 cup BBQ sauce

Instructions
- Preheat the Oven: Set your oven to 375°F (190°C) to begin warming as you prep the other ingredients.
- Tenderize the Chicken: Place chicken breasts in a large resealable bag. Pound them with a meat tenderizer or rolling pin until they’re about 1/2 inch thick for even cooking and juicier results.
- Marinate: Add BBQ sauce and sliced red onions to the bag with the chicken. Seal and gently massage the bag to coat everything evenly. If prepping ahead, refrigerate at this point for up to 24 hours.
- Assemble in Baking Dish: Spray a 9×13-inch baking dish with nonstick spray. Dump the chicken mixture into it, spreading out the chicken breasts. Layer the thick slices of peaches evenly over the top.
- Bake: Place the dish in the preheated oven and bake for 20–25 minutes, or until the chicken’s internal temperature reaches 165°F (74°C) and the peaches are tender.
- Serve: Remove from the oven and let cool slightly. Serve hot, topped with freshly chopped cilantro and extra BBQ sauce if desired.
