Ingredients
- 2 lbs baby potatoes, halved
- 1 block feta cheese
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1 tbsp fresh thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss halved potatoes with olive oil, garlic, thyme, salt, and pepper.
- Spread potatoes on a baking sheet and place the block of feta cheese in the center.
- Roast for 25-30 minutes, or until potatoes are crispy and golden.
- Remove from the oven, and crumble feta cheese over the potatoes.
- Return to the oven for another 5-7 minutes, until the feta is slightly browned.
- Serve warm.
Notes
- For extra flavor, you can add a sprinkle of red pepper flakes before roasting.
- Ensure feta cheese is a block version, not crumbled, for better melting.
- You can substitute fresh thyme with dried thyme, but reduce the amount to 1 tsp.
