Ingredients

  • 2 lbs baby potatoes, halved
  • 1 block feta cheese
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tbsp fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss halved potatoes with olive oil, garlic, thyme, salt, and pepper.
  3. Spread potatoes on a baking sheet and place the block of feta cheese in the center.
  4. Roast for 25-30 minutes, or until potatoes are crispy and golden.
  5. Remove from the oven, and crumble feta cheese over the potatoes.
  6. Return to the oven for another 5-7 minutes, until the feta is slightly browned.
  7. Serve warm.

  • Ensure feta cheese is a block version, not crumbled, for better melting.
