Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 cup plum jam
1/4 cup soy sauce
1 tablespoon rice vinegar
2 cloves garlic, minced
1 teaspoon grated ginger
Salt and pepper to taste
Instructions

Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper, and cook for 6-7 minutes per side until browned and cooked through.

In a small bowl, whisk together the plum jam, soy sauce, rice vinegar, garlic, and ginger.

Pour the plum sauce mixture into the skillet with the chicken and bring to a simmer. Cook for an additional 2-3 minutes, allowing the sauce to thicken and coat the chicken.

Serve the chicken with the sauce spooned over the top.
