Ingredients
1 lb shrimp, peeled and deveined
2 tablespoons olive oil
1 avocado, diced
1/2 cup mango, diced
1/4 cup red onion, finely chopped
1 tablespoon fresh cilantro, chopped
1 tablespoon lime juice
Salt and pepper, to taste
1 cup cooked rice (optional)
Instructions

Heat olive oil in a skillet over medium heat.

Season shrimp with salt and pepper, then cook 2–3 minutes per side until pink and opaque. Remove from heat.

In a small bowl, combine mango, red onion, cilantro, lime juice, and a pinch of salt to make the salsa.
