  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

1 lb shrimp, peeled and deveined

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

1 cup orzo pasta

1/2 cup feta cheese, crumbled

2 tablespoons fresh lemon juice

Fresh parsley for garnish

Instructions

Cook the Orzo:
Cook the orzo pasta according to the package instructions. Drain and set aside.

Cook the Shrimp:
Heat olive oil in a large skillet over medium-high heat. Season shrimp with garlic powder, oregano, salt, and pepper.
Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and opaque.

Combine Ingredients:
Stir in the cooked orzo, feta cheese, and lemon juice. Toss everything together and heat through.

Serve:
Serve the dish hot, garnished with fresh parsley.

Notes

  • Add Vegetables: Include spinach, cherry tomatoes, or zucchini for extra flavor and nutrition.

  • Spicy Kick: Add red pepper flakes or a chopped chili pepper for an added heat.

  • Dairy-Free Version: Omit the feta and use a dairy-free cheese alternative or enjoy it without for a lighter option.

  • Swap Pasta: You can replace orzo with other small pasta shapes like ditalini or penne.
