Ingredients
1.5 lbs beef stew meat, cut into bite-sized pieces
1.5 lbs baby potatoes, halved
4 tablespoons unsalted butter, melted
5 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon onion powder
1 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes (optional)
1 cup beef broth
1 tablespoon soy sauce
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
-
Prep the Ingredients: Place the beef stew meat and halved baby potatoes into the slow cooker.
-
Make the Garlic Butter Mixture: In a small bowl, mix the melted butter, garlic, salt, pepper, smoked paprika, onion powder, thyme, and optional red pepper flakes. Pour this mixture over the beef and potatoes, stirring to coat evenly.
-
Add Broth and Soy Sauce: In another bowl, combine the beef broth and soy sauce. Pour it over the ingredients in the slow cooker.
-
Cook the Dish: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is tender and the potatoes are cooked through.
-
Garnish and Serve: Garnish with fresh chopped parsley before serving.
Notes
-
Vegetable Add-ins: Try adding carrots, mushrooms, or green beans for more veggies in the dish.
-
Herb Substitution: Swap thyme for rosemary or Italian seasoning for a different flavor profile.
-
Creamy Option: Stir in a splash of cream or a dollop of sour cream just before serving for a creamy variation.
-
Spicy: Increase red pepper flakes or add hot sauce to spice things up.
-
Gravy Option: For a thicker, gravy-like sauce, use a cornstarch slurry to thicken the cooking liquid in the last 30 minutes of cooking.
