Ingredients
For the Meatloaf:

- ½ cup ranch dressing
- 2 tbsp sour cream
- 1 tsp smoked paprika (optional, for extra smoky flavor)
Instructions
1. Preheat the Oven
- Preheat your oven to 375°F (190°C).
- Lightly grease a loaf pan or baking sheet.
2. Prepare the Meatloaf Mixture
- In a large bowl, combine:
- Ground beef
- Breadcrumbs
- Egg
- Milk
- Onion
- Diced jalapeños
- Cheddar cheese
- Cream cheese
- Smoked paprika
- Garlic powder
- Salt and black pepper
- Mix until just combined (do not overmix, or the meatloaf will be dense).
- Shape the mixture into a loaf and place it in the prepared pan or baking sheet.
3. Add the Topping
- Spread BBQ sauce evenly over the top of the meatloaf.
- Sprinkle with shredded cheddar cheese.
- Add jalapeño slices for garnish (if desired).
4. Bake the Meatloaf
- Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
- Let it rest for 5-10 minutes before slicing.
5. Make the Creamy Ranch Drizzle
- In a small bowl, whisk together:
- Ranch dressing
- Sour cream
- Smoked paprika (if using)
- Stir until smooth.
6. Serve & Garnish
- Drizzle the creamy ranch sauce over slices of meatloaf before serving.
- Pair with mashed potatoes, roasted vegetables, or a crisp side salad.
