This Snickerdoodle Cobbler is a warm, gooey dessert that combines the flavors of classic snickerdoodle cookies with a comforting cobbler twist. Topped with cinnamon-sugar and baked in a buttery caramel-like sauce, it’s the ultimate cozy dessert for chilly nights and special occasions!

  • Total Time: 45 minutes
  • Yield: 8 servings

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup whole milk
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 cup brown sugar
  • 2 cups hot water

For the Cinnamon-Sugar Topping:

  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Instructions

  • Preheat your oven to 350°F (175°C). Pour the melted butter into the bottom of a 9×13-inch baking pan.
  • In a large bowl, combine milk, vanilla extract, and granulated sugar. Mix until smooth. Add flour, baking powder, salt, and cinnamon, stirring until well combined.
  • Spoon the batter evenly over the melted butter in the baking pan.
  • Sprinkle brown sugar evenly over the batter.
  • Carefully pour the hot water over the batter—do not stir. It will create a rich sauce beneath the cobbler as it bakes.
  • Bake for 30-35 minutes or until the top is golden brown and bubbly around the edges.
  • Mix the cinnamon and granulated sugar for the topping, then sprinkle it evenly over the cobbler while it’s still warm.
  • Let it cool for 5 minutes before serving. Optional: Add a scoop of vanilla ice cream or whipped cream for extra indulgence.

Notes

  • Add Nuts: Stir in chopped pecans or walnuts for added texture.
  • Spice it up: Try adding a pinch of ground nutmeg or cloves for extra warmth.
  • Vegan Option: Use non-dairy butter, plant-based milk, and a flax egg for a vegan version.
