Ingredients
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and black pepper, to taste
- 1 tsp paprika
- 1 tsp garlic powder
- 4 oz cream cheese, softened
- ¼ cup grated Parmesan cheese
- ¼ cup mayonnaise
- 1 cup fresh spinach, chopped
- ½ tsp onion powder
- ½ tsp crushed red pepper flakes (optional)
Instructions
- Preheat the Oven: Preheat to 375°F (190°C). Lightly grease a baking dish with olive oil.
- Prepare the Chicken: Season chicken with salt, pepper, paprika, and garlic powder. Slice a pocket into each chicken breast without cutting all the way through.
- Make the Filling: In a bowl, mix cream cheese, Parmesan, mayonnaise, spinach, onion powder, and red pepper flakes until combined.
- Stuff the Chicken: Fill each chicken breast with the spinach mixture. Secure with toothpicks if needed.
- Bake: Place stuffed chicken in the baking dish and bake for 25-30 minutes, until the internal temperature reaches 165°F (74°C).
- Rest & Serve: Let the chicken rest for a few minutes before serving. Enjoy!
