  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 4 oz cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • ¼ cup mayonnaise
  • 1 cup fresh spinach, chopped
  • ½ tsp onion powder
  • ½ tsp crushed red pepper flakes (optional)

Instructions

  1. Preheat the Oven: Preheat to 375°F (190°C). Lightly grease a baking dish with olive oil.
  2. Prepare the Chicken: Season chicken with salt, pepper, paprika, and garlic powder. Slice a pocket into each chicken breast without cutting all the way through.
  3. Make the Filling: In a bowl, mix cream cheese, Parmesan, mayonnaise, spinach, onion powder, and red pepper flakes until combined.
  4. Stuff the Chicken: Fill each chicken breast with the spinach mixture. Secure with toothpicks if needed.
  5. Bake: Place stuffed chicken in the baking dish and bake for 25-30 minutes, until the internal temperature reaches 165°F (74°C).
  6. Rest & Serve: Let the chicken rest for a few minutes before serving. Enjoy!

Notes

  • Cheese Swap: Use mozzarella, feta, or cheddar instead of Parmesan.
  • Add More Veggies: Mix in sun-dried tomatoes, mushrooms, or bell peppers.
  • Spicy Kick: Add extra crushed red pepper flakes or a dash of hot sauce.
  • Air Fryer Method: Cook at 375°F (190°C) for 18-20 minutes, flipping halfway through.
