  • Total Time: 45 minutes
  • Yield: 2 servings

Ingredients

For the Steak:

  • 2 ribeye steaks (or preferred cut)
  • Salt & black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 4 cloves garlic, smashed
  • 2 sprigs fresh rosemary

For the Fries:

  • 1 lb potatoes, peeled & cut into fries
  • 1 tbsp olive oil
  • Salt, to taste

Instructions

1. Prepare the Fries

  • Preheat oven to 425°F (220°C).
  • Toss cut potatoes with olive oil & salt, then spread on a baking sheet in a single layer.
  • Bake for 25-30 minutes, flipping halfway through, until golden brown & crispy.

2. Prepare the Steak

  • While fries bake, season steaks generously with salt & black pepper on both sides.
  • Heat olive oil in a cast-iron skillet over medium-high heat until hot.

3. Sear the Steak

  • Place steaks in skillet and sear for 3-4 minutes per side for medium-rare (adjust for preferred doneness).
  • In the last minute of cooking, add butter, garlic, and rosemary.
  • Tilt the pan slightly and baste steaks by spooning melted butter over them.
  • Remove steaks and let rest for 5 minutes to retain juices.

4. Serve and Enjoy!

  • Plate the steak with crispy fries.
  • Serve with béarnaise, garlic aioli, or peppercorn sauce for extra flavor.
