Ingredients
1 lb ground turkey
2 medium sweet potatoes, peeled and diced
1 onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 teaspoon cumin
Salt and pepper, to taste
1 tablespoon olive oil

Cook the turkey: Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, crumbling with a spoon, until browned and fully cooked.

Sauté the vegetables: Add onion, bell pepper, and garlic. Cook for 3–4 minutes until softened.

Add sweet potatoes and seasonings: Stir in diced sweet potatoes, cumin, salt, and pepper. Mix well.

Cover and cook: Cover skillet and cook for 10–15 minutes, stirring occasionally, until sweet potatoes are fork-tender and everything is well combined.

Serve: Remove from heat and serve hot. Optionally garnish with chopped herbs or a sprinkle of cheese.
