Ingredients
For the Tzatziki Dressing:
- 1 cup + 2 Tbsp plain Greek yogurt
- ½ cucumber, grated
- 2 to 3 garlic cloves, pressed
- 2 Tbsp olive oil
- 2 Tbsp fresh dill, chopped
- Salt and pepper to taste
For the Salad:
- 2 cups cooked chicken, chopped
- 2 cups romaine lettuce, chopped
- 1 cup grape tomatoes, halved
- ½ cup pepperoncini peppers, sliced
- ½ cup Kalamata olives, sliced
- ¼ cup red onion, chopped
- ½ cup feta cheese, crumbled
Instructions
1️⃣ Prepare the Tzatziki: In a bowl, mix Greek yogurt, grated cucumber, pressed garlic, olive oil, and fresh dill. Season with salt and pepper, stirring until smooth.
2️⃣ Assemble the Salad: In a large bowl, combine romaine lettuce, grape tomatoes, pepperoncini, olives, and red onion.
3️⃣ Add the Chicken: Layer the chopped cooked chicken over the salad.
4️⃣ Dress with Tzatziki: Spoon the prepared tzatziki sauce over the salad and chicken.
5️⃣ Garnish & Serve: Sprinkle crumbled feta cheese on top. Serve immediately and enjoy!
Notes
- For meal prep, store the tzatziki dressing separately to keep the salad fresh.
- Swap chicken for grilled shrimp, tofu, or turkey for variety.
- Use dried dill (½ the amount) if fresh isn’t available.
