1 cup almond flour
1/2 cup vanilla protein powder
1/4 cup coconut flour

1/4 cup coconut oil, melted
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup freeze-dried strawberries, chopped

-
Stir in the honey, melted coconut oil, and chopped freeze-dried strawberries.
-
Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet. Gently press down on the dough balls to slightly flatten them.

-
Let the cookies cool completely before enjoying.
Notes
-
Other Fruits: Swap freeze-dried strawberries for raspberries, blueberries, or dried cherries for a different twist.
-
Sweetener Options: Replace honey with maple syrup, stevia, or a sugar-free sweetener for a lower-sugar version.
-
Add-ins: Add chopped nuts, such as almonds or walnuts, for extra crunch and healthy fats.
