- 2 cups cooked chicken breast, shredded
- 4 cups mixed salad greens
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1/2 cucumber, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup roasted peanuts, chopped
- 3 tablespoons lime juice
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1 red chili, thinly sliced (optional)
Instructions
- In a large bowl, combine the shredded chicken, salad greens, shredded carrots, bell pepper, cucumber, cilantro, and mint.
- In a small bowl, whisk together lime juice, fish sauce, soy sauce, honey, sesame oil, and garlic to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Garnish with chopped peanuts and sliced chili, if desired.
- Serve immediately and enjoy!
