Ingredients
Fruit & Base
- 2 cups fresh or frozen strawberries, hulled
- 1 cup coconut milk or coconut cream
- 1/2 cup pineapple juice
Sweetener & Ice
- 1 tablespoon honey or agave syrup (optional)
- 1 cup ice
Garnish
- Fresh strawberries
- Pineapple wedges
Instructions
- Blend the Ingredients: In a blender, combine the strawberries, coconut milk or cream, pineapple juice, honey or agave syrup (if using), and ice. Blend on high speed until the mixture is smooth and creamy, with no large chunks remaining.
- Adjust Consistency: Check the texture; if it is too thick, add a splash more pineapple juice or coconut milk and blend again until it reaches your desired consistency.
- Serve: Pour the Virgin Strawberry Piña Colada evenly into two glasses. For a beautiful presentation, garnish each glass with a fresh strawberry and a pineapple wedge on the rim.
- Enjoy: Sip and savor your refreshing and naturally sweet strawberry piña colada! This drink is best served immediately while frosty and creamy.
Notes
- You can use either fresh or frozen strawberries; frozen will make your drink extra frosty.
- For a lighter drink, use light coconut milk or substitute with coconut water.
- Adjust the sweetness by adding more or less honey/agave, or omit entirely for a naturally sweet drink.
- This mocktail can be made ahead and kept chilled for up to one day, but is best enjoyed fresh.
