- 2 ripe bananas, mashed
- ½ cup applesauce
- ½ tsp vanilla extract
- 1 ½ cups old-fashioned oats
- ½ cup fresh or frozen blueberries
Instructions
1. Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
2. Mix the Wet Ingredients
- In a large bowl, mash the bananas until smooth.
- Stir in the applesauce and vanilla extract until well combined.
3. Add the Dry Ingredients
- Mix in the oats, stirring until fully incorporated.
4. Fold in the Blueberries
- Gently fold in the blueberries, being careful not to crush them.
5. Shape the Cookies
- Scoop heaping tablespoons of the mixture onto the prepared baking sheet.
- Flatten slightly into cookie shapes.
6. Bake Until Golden
- Bake for 15-18 minutes, or until the cookies are set and lightly golden.
7. Cool & Enjoy
- Let the cookies cool on the baking sheet for a few minutes.
- Transfer to a wire rack to cool completely.
