Ingredients
- 1 tablespoon butter
- 1 1/2 cups orzo pasta
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup peas (fresh or frozen)
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, melt the butter over medium heat. Add the orzo and cook for 1-2 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a simmer. Cook for 8-10 minutes, stirring occasionally, until the orzo is tender and the liquid is absorbed.
- Stir in the heavy cream, Parmesan cheese, and peas. Cook for another 2-3 minutes until the peas are heated through and the sauce is creamy.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a non-vegetarian version, you can use chicken broth instead of vegetable broth.
- You can substitute frozen peas with fresh peas when in season for a fresher flavor.
- Add a bit of lemon zest for a citrusy kick.
