Ingredients

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

4 large eggs

1 1/2 cups sugar

1 cup vegetable oil

2 teaspoons vanilla extract

2 cups grated carrots

1/2 cup chopped walnuts (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

2 teaspoons vanilla extract

4 cups powdered sugar

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

  • In a large bowl, beat the eggs, sugar, and vegetable oil until smooth. Stir in the vanilla extract and grated carrots.

  • Gradually add the dry ingredients to the wet mixture, mixing until combined. Fold in the chopped walnuts if desired.

  • Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  • Allow the cake to cool completely before frosting.

  • For the frosting, beat the softened cream cheese, butter, and vanilla extract together until smooth. Gradually add the powdered sugar and beat until light and fluffy.
