  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

2 cups cooked rice (preferably cold)

2 eggs, beaten

1/2 cup frozen peas and carrots

2 tablespoons soy sauce

1 tablespoon sesame oil

2 green onions, sliced

1 clove garlic, minced

Salt and pepper to taste

Instructions

  • Heat sesame oil in a large skillet or wok over medium-high heat.

  • Add the minced garlic, peas, and carrots to the pan, cooking for 3-4 minutes until the vegetables are tender.

  • Push the veggies to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.

  • Add the cold, cooked rice to the pan, and pour in the soy sauce. Stir everything together until well combined and heated through.

  • Stir in the sliced green onions and season with salt and pepper to taste.

  • Serve hot and enjoy!

Notes

  • Vegetarian version: Add more veggies like bell peppers, corn, or spinach to make the dish heartier and more nutritious.

  • Protein boost: Add cooked chicken, shrimp, or tofu for a complete meal.

  • Spicy kick: Add sriracha or red pepper flakes for extra heat.
