  • Total Time: 30 minutes
  • Yield: 6 flatbreads

Ingredients

  • 1 cup cottage cheese
  • 1 ½ cups all-purpose flour (plus extra if needed)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder (optional)
  • ¼ teaspoon black pepper
  • 1 large egg
  • 1 tablespoon olive oil
  • 2 tablespoons water (as needed)

Instructions

1. Preheat & Prepare

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.

2. Make the Dough

  • In a large mixing bowl, combine cottage cheese, flour, baking powder, salt, garlic powder (if using), and black pepper.
  • Add the egg, olive oil, and water, stirring to form a dough.
  • If the dough is too sticky, add more flour 1 tablespoon at a time until it’s easy to handle.

3. Shape the Flatbreads

  • Divide the dough into 6 equal portions.
  • Roll each portion into a ball, then flatten into a disc (about ¼-inch thick).

4. Bake Until Golden

  • Place the flatbreads on the prepared baking sheet.
  • Bake for 15-20 minutes, or until golden brown and slightly crispy on the edges.

5. Cool & Serve

  • Let the flatbreads cool for a few minutes before serving.

Notes

  • Herb-Infused: Add fresh or dried rosemary, thyme, or basil to the dough.
  • Cheesy Twist: Mix in shredded cheddar or Parmesan for extra cheesiness.
  • Spicy Kick: Add red pepper flakes or chili powder for some heat.
  • Gluten-Free Option: Use a gluten-free flour blend instead of all-purpose flour.
  • Sweet Version: Skip the garlic and pepper, and add honey or cinnamon for a sweet twist.
