Ingredients
- 1 cup cottage cheese
- 1 ½ cups all-purpose flour (plus extra if needed)
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon garlic powder (optional)
- ¼ teaspoon black pepper
- 1 large egg
- 1 tablespoon olive oil
- 2 tablespoons water (as needed)
Instructions
1. Preheat & Prepare
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
2. Make the Dough
- In a large mixing bowl, combine cottage cheese, flour, baking powder, salt, garlic powder (if using), and black pepper.
- Add the egg, olive oil, and water, stirring to form a dough.
- If the dough is too sticky, add more flour 1 tablespoon at a time until it’s easy to handle.
3. Shape the Flatbreads
- Divide the dough into 6 equal portions.
- Roll each portion into a ball, then flatten into a disc (about ¼-inch thick).
4. Bake Until Golden
- Place the flatbreads on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown and slightly crispy on the edges.
5. Cool & Serve
- Let the flatbreads cool for a few minutes before serving.
Notes
- Herb-Infused: Add fresh or dried rosemary, thyme, or basil to the dough.
- Cheesy Twist: Mix in shredded cheddar or Parmesan for extra cheesiness.
- Spicy Kick: Add red pepper flakes or chili powder for some heat.
- Gluten-Free Option: Use a gluten-free flour blend instead of all-purpose flour.
- Sweet Version: Skip the garlic and pepper, and add honey or cinnamon for a sweet twist.
